Ingredients
500 g ripe pears, peeled, quartered, and cored
100 g red onions, finely chopped
1 tsp curry powder
1 tsp chopped rosemary
100 ml apple cider vinegar
150 ml apple juice
125 g Dr. Oetker gelling sugar 2:1
2 tsp sweet mustard
½ tsp salt
Instructions
Prepare the jars: Sterilize the jars and screw caps by boiling them or rinsing them with hot water to ensure long-lasting storage.
Prepare the pears: Peel the pears, quarter them, remove the core, and finely chop them to weigh 500 g.
Chop the onions: Peel the red onions and finely dice them.
Mix the ingredients: In a large pot, combine the diced pears, onion, vinegar, apple juice, curry, chopped rosemary, and gelling sugar well.
Bring the mixture to a boil, stirring continuously, and let it cook for at least 5 minutes while occasionally stirring. Make sure the pears remain firm.
Taste the chutney and adjust it with salt and sweet mustard.
Fill the hot chutney immediately to the brim of the prepared jars. Seal them with the screw caps and turn them upside down to create a vacuum, leaving them for about 5 minutes.
Notes
Use ripe, juicy pears for the best flavor, and stir regularly to prevent burning.
