A simple and delicious dish featuring creamy walnut sauce, perfect for a stress-free evening meal.

Ingredients

  • 300 g Spaghetti
  • 100 g Walnüsse
  • 1 TL Butter
  • 2-3 Knoblauchzehen, fein gehackt
  • 100-150 ml Kochsahne
  • ½ TL Pfeffer
  • ½ TL Salz
  • 2-3 Kellen Pastawasser
  • 40 g geriebener Parmesan
  • 1 EL frische Petersilie, gehackt
  • ½ Bio Zitrone (Abrieb, optional)

Instructions

  1. Bring a large pot of water to a boil and add a pinch of salt. Cook the spaghetti according to package instructions until al dente.
  2. While the noodles are cooking, heat a pan over medium heat and toast the walnuts for 3-4 minutes until golden brown, making sure not to burn them. Coarsely chop the nuts.
  3. In the same pan where you toasted the walnuts, add the butter. Once melted, add the garlic and sauté for 1-2 minutes until fragrant.
  4. Pour the cooking cream into the pan and let it come to a brief boil. Season with salt and pepper, then add the toasted walnuts. Stir until well combined.
  5. Once the spaghetti is done, drain it, reserving some pasta water. Add the spaghetti to the sauce and mix well. If the sauce is too thick, add small amounts of reserved pasta water until the desired consistency is reached.
  6. Serve garnished with grated Parmesan and fresh parsley. Optionally, zest the organic lemon over the pasta for a fresh taste.

Notes

Be sure to avoid overcooking the spaghetti to keep it al dente and prevent it from becoming mushy.
