Ingredients

  • 500g Wirsing (savoy cabbage), fresh
  • 200g Spätzle (homemade or store-bought)
  • 150g grated cheese (e.g., Emmental or Gouda)
  • 1 onion, diced
  • 2 tablespoons butter
  • 200ml cream
  • Salt and pepper, to taste
  • Nutmeg, to taste

Instructions

  1. Prepare the savoy cabbage by cleaning it and cutting it into fine strips.
  2. Sauté the onion in butter until translucent.
  3. Add the savoy cabbage to the pan and sauté for about 5-7 minutes until wilted.
  4. Boil the spätzle according to package instructions.
  5. Mix the cheese with the cream and add it to the savoy cabbage and onion mixture.
  6. Fold the cooked spätzle into the savoy cheese mixture and season with salt, pepper, and nutmeg.
  7. Combine well, sprinkle with some cheese, and bake in the oven until the cheese is melted and golden brown.

Notes

Ensure the savoy cabbage doesn’t cook too long to retain some bite. Experiment with different cheese varieties for unique flavors.
